Clémence Isaure seems to be a legendary character from the city of Toulouse. The story says that Clémence was born in 1450 in a wealthy and noble family of Toulouse, where she received a very formal education. As it happens in fairy tales, she fell in love with a handsome knight who shared her taste for poetry. Unfortunately the knight died during the war and Clémence took vows of celibacy and chastity. However, she remained faithful to poetry and when she died in 1500, she donated all her money to the poetic institution of Toulouse called “l'Académie des Jeux Floraux”. The sums of money she passed on were so important that the city of Toulouse could still enjoy her donations in the 19th century. Even though Clémence Isaure was represented in statues, prints and medals, scholars claim that she never existed.

Ingredients: Chasselas grapes, cocoa, sugar, cocoa butter, Armagnac, glucose, water, soy lecithin as emulsifier.
