The “quenelle” is a poached oval dumpling of pureed forcemeat. The quenelle “au brochet” (pike), “aux écrevisses” (crayfish), or “aux truffes” (truffles) are the specialties of the region. The quenelle first made an appearance in the 18th century and it was acclaimed by Brillat-Savarin, a famous French gourmet and author of a work on gastronomy entitled The Physiology of Taste.
